As the summer holidays stretch lazily ahead and the city slowly leans into the SG60 celebrations, Pullman Singapore Hill Street presents a timely invitation for all. From 2 June to 31 July 2025, the hotel’s signature restaurant, Madison’s, presents Afternoon Lingering Treats; an exclusive afternoon tea experience in collaboration with homegrown favourite, Mdm Ling Bakery.
Best known for their iconic festive cookies and contemporary renditions of traditional flavours, Mdm Ling Bakery has long been a staple in households during Lunar New Year and other celebratory seasons. But this latest collaboration marks a new chapter for Mdm Ling, as it steps into a sit-down dining space for the very first time, offering a refined tea experience that pays homage to Singapore’s rich culinary heritage with a distinctly local heart.
The experience begins with a playful, savoury selection that reimagines local classics with a modern twist. The Mee Sua Kueh is elevated into delicate, bite-sized parcels layered with umami. The Salted Egg Yolk Bun, with its golden, molten custard core, offers a moment of pure indulgence. And then comes the Mini Pullman-Style Rojak, a riot of textures with tropical fruits, crisp wonton chips and tofu tossed in a zippy tamarind dressing. Alongside, the Chilli Prawn Pie Tee with a delicate crown of 8 Gems Caviar adds luxe to the mix, and a hearty Satay Chicken Sando rounds out the savouries with peanut-marinated goodness nestled in soft, milky bread. In between, diners can cleanse the palate with Truly Rice Crackers.
The sweet offerings are just as delightful. Think a moist and fruity Mini Cempedak Cake, and a Chendol Panna Cotta that blends creamy indulgence with pandan jelly and gula Melaka. Raspberry Lychee Rose Cake provides floral freshness, while the Black Sesame Cheese Tart delivers a perfect nutty-creamy balance. For those who favour subtlety, the Purple Potato Mousse delivers a velvet-smooth finish, and the Coconut Scones—served with Azuki Bean Jam and whipped cream—are the perfect golden-brown delight.
To close the experience, guests are treated to Mdm Ling’s signature cookies. There’s the robust bitterness of Kopi Siew Dai, echoing the strong pull of a traditional kopi; the fragrant Pandan Pineapple, with its buttery base and tropical lift; and the indulgent Molten Chocolate, gooey in the centre and rich with cocoa. These final touches pair beautifully with a selection of hot or iced drinks featuring Earl Grey, Darjeeling, Ginger Honey & Mint, and many more, alongside Nespresso coffee options and Dilmah’s Silver Jubilee Collection.
But what truly elevates Afternoon Lingering Treats is its emotional resonance. This isn’t just a limited-time menu. It’s a sensory memory bank, a culinary time capsule that speaks to shared histories and personal rituals. For locals, it’s a taste of remembrance. For visitors, an introduction to the layered soul of Singaporean cuisine. And for everyone, it’s a perfect excuse to linger a little longer over tea. With limited seats available, advance reservations are highly recommended.
Priced at SGD88++ for two, Afternoon Lingering Treats is available on weekdays from 2pm to 5pm, and on Saturdays in two sessions: from 2pm to 3:30pm and 4pm to 5:30 pm.
