A Renewed SanSara Has Diwali Plans

India is huge. So, with a land that spread out, nothing taste the same from one region to the next. You can say that SanSara—situated at Grand Copthorne Waterfront Hotel Singapore—serves India food. You're correct but you're not specific. SanSara doles up North Indian cuisine with aplomb; their menu stretches across states like Punjab, Rajasthan, and Kashmir.

After closing for renovation, the restaurant reopens in August with a new look and menu. With Diwali on the horizon, SanSara invites guests to mark the Festival of Lights with food that honours ritual and reimagines it for now. We begin with the celebratory Diwali Thali, with flavours that goes beyond a single plate. Catering to carnivores and vegetarians, patrons have four courses to dive through—chutneys and spiced starters; rich, slow-cooked mains; and a comforting, celebratory sweet to close.

The non-vegetarian thali starts with a Punjabi Murgh Tikka (roasted chicken tikka; raw mango coriander chutney) and a Jal Tarang (pan-fried Hokkaido scallops). After those starters, comes the main, the Laal Maans (lamb shank doused in a Rajasthani tomato-onion gravy). Dessert is a Keshari Rasmalai, a Poached Cottage Cheese finale.

For the vegetarians, you start with the oven-roasted Malai Broccoli (duh, broccoli... nutmeg and garam masala); Aaloobukhaara Hara Mutter Guller (green cakes studded with spiced prunes); then into the main dish; a Paneer Rogan Josh (a cottage cheese steak slathered in saffron milk).

The limited-time Diwali Thali is available from 18 to 23 October 2025 at SGD88++ per pax.

There are new lunch and dinner sets. Served in polished copperware that unfolds with four tiers: a chaat appetiser, a regional curry with naan or rice, a seasonal vegetable or meat side, and traditional sweets for dessert.

That includes items like Goat Cheese Makai Asrafi (a goat-cheese-stuffed sweet corn tikki), Murgh Tikka Masala and Zaffrani Pulao paired with Chilli Cheese Naan. There is also a Tiffin Dinner Set, but with this, the set is meant for sharing and presented in copperware for two. Expect dishes like Gosht Seekh Kebab, Purple Sweet Potato Tikki Chaat (with chana masala and tamarind), and mains like Dahi Wali Machli (sea bass in a spiced yoghurt curry) and Kadhai Masala Singara Mutter (water chestnut and green pea curry), served with Jeera Dhaniya Ghee Rice and Ajawani Laccha Parata.

The Tiffin Lunch Set (single-portion) is now available at SGD48++, while from 2 December 2025, the Tiffin Dinner Set will be launched and retails for SGD88++ per set (2 pax).

No word on whether these sets are available for takeaway if you bring your own tiffins...

And now we end on a sweet note with SanSara’s Diwali Mithai Gift Box. Comprising of 12 handcrafted confections, these sweets are inspired by heritage recipes and ceremonial symbolism. Presented in a mural-inspired gift box crafted in India, you get Rajsi Mewa, Sunehri Mohar and Aam-e-Khas, among others.
