I venture to say that when it comes to burgers, most Singaporeans settle. For too long, we’ve been biting into buns that are a step away from what they used to be; frills-free and straight-up tasty. If it was adolescent enlightenment learning that the big M chain does not meet proper burger standards, acquainting oneself with Mo & Jo can be considered the second coming-of-age.
The Australian grain-fed patties, tender pulled pork, fresh Australian barramundi and the homemade sauces they are paired with are exquisite. The hands down favourite is Holy Smoke, which is the lethal combination of smoked bacon atop patty, caramelised onion, house mayo and barbecue sauce. For a seemingly heart-attack inducing ingredient list, the burger doesn’t feel too sinful to eat, possibly leveraging on a balance cultivated over time.
It also makes a lot of sense for the lot to sit between uniquely, freshly baked sourdough buns. The brand is, after all, the brainchild of Baker & Cook founder Dean Brettschneider, who stays true to the artisan baker DNA and acknowledges that the bread can make or break the burger. You don’t want a sweet but soggy brioche. Instead, you’ll want a soft yet strong texture that fits the filling without being engulfed by it.
I have to admit my scepticism at having one of the toughest breads known to man sandwich my burger, but I was thankfully proven wrong. The sourdough, especially peppered with grains, was both a fort for what it held inside—meaning no breakdown common to densely layered burgers—and a perfectly toasted complement to the savoury relishes.
There’s kid size for some menu options, which is a great cheat code to ease the guilt of helping yourself to the legitimately thick milkshakes after. Otherwise, go for Baker Boy Summer Ale, a light beer specially handcrafted for the tropical escapade. Centred around an open kitchen, the bright and breezy neighbourhood restaurant is the ideal backdrop for an encounter with these nice buns.
